THE ANECDOTE OF BEAUFORTAIN
“The concave heel of our Beaufort is an emblematic symbol: it was designed to facilitate the transport of cheeses on muleback in the alpine pastures and to prevent them from collapsing during aging. This unique shape reflects a whole traditional know-how, passed down from generation to generation, and bears witness to the work of breeders and life in the alpine pastures.”

Le Beaufort can be enjoyed all year round!

🧀 FOR APERITIF

Beaufort is ideally enjoyed in cubes or thin slices, accompanied by:

Dried fruits: walnuts, hazelnuts, almonds
Fresh fruits: white grapes, pear, fig
Bread: country bread, nut bread, plain crackers
Charcuterie: dry sausage from Savoie, cured ham

💡 Tip: count on 30 - 40g per person for an aperitif!

🥘 IN COOKING

Beaufort is a versatile cheese that enhances many dishes:

Savoyard fondue: the traditional cheese par excellence
Gratin dauphinois: for a creamy and melting texture
Tartiflette: reimagined with Beaufort instead of Reblochon
Beaufort tart: adds character and flavor
Pasta: melted over fresh pasta with a bit of cream
Cheese crust: on toasted bread with a poached egg

💡 Tip: Beaufort melts perfectly and does not string.

Beaufort has interesting nutritional qualities for the consumer. With 1% calcium, it is 6 times richer than milk or yogurt. Nutritionally, 60g of Beaufort covers two-thirds of the recommended daily intake of calcium. It’s the ideal cheese for children and athletes!

What our customers think of the cooperative

My favorite cheese, Beaufort, at its best. Possible visit to the cellars. Refrigerated vending machine outside very useful if passing by outside opening hours.

The Gi

Every year when we come to Beaufort, we get our cheese there. And we are never disappointed 😁 (The best is the summer Beaufort 😉)

Laura

Very good cheese! A few other local products in the store. Free small museum above the store.

Novels

If you come to Beaufort, you must stop here to buy the cheese of the same name. Unbeatable price and it is excellent.

Anselme

Super cool and the Beaufort is really very good

Cris

The king of cheese, you either love it or hate it, so it's 1 or 5 stars for me; it's 5 stars, especially since the prices in the holy grail of sales are not excessive compared to the shops that sell it all over France.

DBR

Behind every wheel, passionate men and women.

Since 1957, the Cooperative brings together 180 farmers committed to their territory and the quality of their work.

By purchasing our Beaufort AOP, you ensure fair compensation for producers and contribute to the preservation of alpine pastures, landscapes, and traditional know-how in Savoie.

Why Are Some Orders Not Deliverable Abroad?

Depending on the period and the destination, we may be forced to block certain shipments in order to ensure the sanitary quality of the product. In case of unavailability, no delivery method will be offered in the cart.

Why is Chrono Ambient not available all year round?

In the summer months, outdoor temperatures do not allow for optimal cheese preservation during transport at room temperature. That is why Chrono Ambient is disabled starting from May 1st.

We limit orders to a minimum of 1 kg due to significant carbon costs and the small size of our team.
This allows us to ensure responsible logistics while maintaining affordable rates.

🧀 PRODUCT & STORAGE

How to Store My Beaufort After Receipt?

Vacuum packaging.

Our slices are vacuum packed to preserve their freshness and taste qualities. Best before: up to 2 months.

Before tasting:
For optimal tasting:
Remove the slice from its vacuum packaging
Let it return to room temperature for at least 2 hours
The cheese will then release all its aromas and regain its ideal texture

After opening:
Store your Beaufort in the refrigerator (between 4°C and 8°C):
In a cheese box
Or wrapped in parchment paper
Shelf life: 4 to 6 weeks

Tip: If a thin white layer appears on the surface, it’s normal! Gently scrape it off with a knife before tasting.

Is My Beaufort Really AOP?

Yes! Our Tarine and Abondance breed cows are raised in the Beaufortain according to the strict rules of the AOP Beaufort. They are fed exclusively on grazed grass and hay from the region. Each bale is traceable from the collection of the milk to your plate thanks to the batch number on the packaging.

What is the difference between Beaufort summer and Beaufort?

Beaufort AOP (winter)
Made from November to May, when the cows are in the valley or in the barn
Cows primarily fed on hay
Lighter paste (ivory)
Sweet and milky aromas

Beaufort Summer AOP
Made from June to October, including milk from alpine pastures
Cows grazing in high-altitude pastures
Darker yellow paste
Pronounced, floral, and fruity aromas

Both cheeses have the Protected Designation of Origin (PDO). The difference in season is not everything: the collection area, the cheesemaker’s expertise, and the aging duration also influence the taste.

How much Beaufort can I order?

Each slice weighs approximately 500g (the weight may vary slightly), however, it will always be a piece of at least 500g. The displayed weight is the minimum guaranteed; you will receive at least 500g (and often more).

Minimum order: 1 kg (which is 2 slices minimum)

“A la carte” quantity: You can freely choose in slices of 500g (1kg, 1.5kg, 2kg, 3kg, etc.)
