THE ANECDOTE OF BEAUFORTAIN
“The concave heel of our Beaufort is an emblematic symbol: it was designed to facilitate the transport of cheeses on the backs of mules in the alpine pastures and to prevent them from collapsing during aging. This unique shape reflects a whole traditional know-how, passed down from generation to generation, and testifies to the work of the breeders and life in the alpine pastures.”

2 small glasses of white wine from Savoie
1 tray
½ clove of garlic
A few drops of Kirsch (optional)
Pepper and nutmeg
Cut the bread into small cubes.
Rub an enamelled pot with the ½ clove of garlic.
Heat the wine. As soon as it starts to foam, add the cheese while continuously stirring with a wooden spoon.
Add pepper and nutmeg.
When the contents of the tray are melted, add the Kirsch, continuing to stir gently.
As soon as the mixture rises in the pot, it is important to serve it by placing it on a burner.
Dip the cubes of bread into the fondue and enjoy.
