Our Beaufort is produced, aged and perfected in its native valley, in Beaufort-sur-Doron, at the heart of the region that gave it its name. The Cooperative of Beaufortain, located in the heart of the village, masters all stages, from the mountain to the wheel, in compliance with the specifications since 1968.

What is the difference between Beaufort and Summer Beaufort?
The Summer Beaufort is produced when the cows go to the alpine pastures from June to October. They then feed on a wide variety of mountain herbs and flowers, which gives the cheese richer, floral, and complex aromas.
The Beaufort (also called Winter Beaufort) is made when the cows are in the barn from November to May. Their diet consists mainly of hay harvested during the summer, which gives the cheese sweeter and more consistent flavors.
