THE ANECDOTE OF BEAUFORTAIN
“The concave heel of our Beaufort is an emblematic symbol: it was designed to facilitate the transport of cheeses on muleback in the alpine pastures and to prevent them from collapsing during aging. This unique shape reflects a whole traditional know-how, passed down from generation to generation, and testifies to the work of the breeders and life in the alpine pastures.”
