LE BEAUFORT
Made from November to May, when the cows are in the valley including in the barn and are fed with hay harvested in the summer, rich in all the flora of the high mountains…
Our Beaufort is distinguished by:
- A pale yellow paste, a sign of a hay-based diet
- A mild taste, with milky notes
- A minimum aging of 5 months
Ideal on a cheese platter, in Savoyard fondue, or simply with a good country bread and a white wine.
1 kg of Beaufort purchased = direct support to farmers from Beaufortain
THE ANECDOTE OF BEAUFORTAIN
“The concave heel of our Beaufort is an emblematic symbol: it was designed to facilitate the transport of cheeses on the backs of mules in the alpine pastures and to prevent them from collapsing during aging. This unique shape reflects a whole traditional know-how, passed down from generation to generation, and bears witness to the work of the breeders and life in the alpine pastures.”
