Beaufort Tart

Ingredients

For 6 people

For the dough:

  • 250g of flour
  • 125g of butter
  • 20cl of water

For the filling:

  • 500g of Beaufort cheese
  • 12 thin slices of Coppa
  • 25cl of crème fraîche
  • 25cl of whole milk
  • 3 eggs

Recipe Steps

  • Preheat the oven to 190 °C.
  • Prepare the dough by mixing the flour, butter, and water until you obtain a smooth dough.
  • Form a ball and let it rest for a few minutes.
  • Butter a tart pan.
  • Roll out the dough and place it in the pan.
  • Prick the bottom with a fork.
  • Cut the Beaufort into thin slices.
  • Whisk the crème fraîche with the eggs and milk.
  • Lightly salt, pepper, and add a pinch of nutmeg.
  • Incorporate most of the Beaufort.
  • Pour the mixture over the tart.
  • Sprinkle the remaining Beaufort on top for a nice golden color.
