Grated Beaufort Muffins

Ingredients

For 4 people

For 4 bagels:

  • 250g of potato
  • 100g of carrot
  • 12cl of heavy cream
  • 2 eggs
  • 120g of Beaufort cheese
  • 50g of butter
  • Salt, pepper
  • Toppings to your taste: cherry tomatoes, ham, zucchini, chorizo, hazelnuts…

Recipe Steps

  • Preheat the oven to 180 °C.
  • Generously butter the muffin molds.
  • Grate the potatoes without rinsing them. Mix with the grated carrots.
  • Lightly salt and pepper.
  • Press the mixture against the sides of the molds, leaving space in the center.
  • Bake for 15 minutes.
  • Meanwhile, mix the eggs, cream, and grated Beaufort cheese.
  • Remove the molds from the oven.
  • Add the egg–cream–Beaufort mixture to the center along with your choice of toppings.
  • Return to the oven and bake until the muffins are golden brown and cooked through.
