Stuffed Vegetables with Beaufort

Ingredients

For 4 people

For 4 bagels:

  • 4 tomatoes
  • 4 round zucchinis
  • 1 zucchini
  • 2 eggplants
  • 2 onions
  • 200 g Beaufort cheese
  • ½ bunch of basil
  • Olive oil
  • Salt and pepper

Recipe Steps

  • Wash all the vegetables.
  • Hollow out the tomatoes and round zucchinis.
  • Cut the eggplants into chunks.
  • Dice the flesh and other vegetables into small cubes.
  • Sauté the onions in olive oil over high heat and let them brown for 3 minutes.
  • Add the pieces of eggplant, zucchini, and a tablespoon of oil.
  • Continue cooking for 5 minutes.
  • One minute before the end, add the tomatoes.
  • Season with salt and pepper.
  • Stop cooking, then add the basil and the Beaufort cut into cubes.
  • Stuff all the vegetables with the mixture.
  • Place the vegetables in a baking dish.
  • Drizzle with a little olive oil.
  • Bake for 40 to 50 minutes in a preheated oven at 180 °C.
