Ingredients
For 4 people
For 4 bagels:
- 4 tomatoes
- 4 round zucchinis
- 1 zucchini
- 2 eggplants
- 2 onions
- 200 g Beaufort cheese
- ½ bunch of basil
- Olive oil
- Salt and pepper
Recipe Steps
- Wash all the vegetables.
- Hollow out the tomatoes and round zucchinis.
- Cut the eggplants into chunks.
- Dice the flesh and other vegetables into small cubes.
- Sauté the onions in olive oil over high heat and let them brown for 3 minutes.
- Add the pieces of eggplant, zucchini, and a tablespoon of oil.
- Continue cooking for 5 minutes.
- One minute before the end, add the tomatoes.
- Season with salt and pepper.
- Stop cooking, then add the basil and the Beaufort cut into cubes.
- Stuff all the vegetables with the mixture.
- Place the vegetables in a baking dish.
- Drizzle with a little olive oil.
- Bake for 40 to 50 minutes in a preheated oven at 180 °C.
