From milking to rounds
The dairy cooperative of Beaufortain, where Florent Perrier worked for 27 years, including 10 as production manager, embodies a true collective vision. We ensure the collection of milk, production, aging, marketing, and promote the reputation of Beaufort in the markets.
Now president, Florent wishes to continue this mission: to defend sustainable mountain agriculture, enhance the quality of products, and support the cooperative in its future challenges. His journey illustrates the strength of a sector rooted in the territory and looking towards the future.
Florent Perrier, a passionate cheesemaker
Former world champion in ski mountaineering, Florent is above all a cheesemaker and a lover of his region. With his partner, he perpetuates the family tradition by producing Beaufort Chalet d’Alpage: a cheese made on-site from the still warm milk of the milking. Only three farms in Beaufortain maintain this demanding know-how today.
A passion and a heritage
For Florent, this profession is much more than an activity: it is a vocation. Transforming milk into cheese, he says, is a passion and a family heritage. His commitment goes beyond his own alpine pasture: as president of the cooperative, he embodies a collective and supportive sector that values the work of farmers and promotes Beaufort far beyond the mountains.
