Buckwheat Waffles with Beaufort Cheese

Ingredients

For 4 people

  • 80 g of buckwheat flour
  • 80 g of wheat flour
  • 100 g of Beaufort cheese
  • 250 ml of milk
  • 70 g of butter
  • 2 eggs
  • Salt and pepper
  • 4 small sprigs of parsley

Recipe Steps

  • Grate the Beaufort cheese.
  • Finely chop the parsley, leaves and stems.
  • Melt the butter over low heat in a small saucepan.
  • Mix the flours and grated Beaufort cheese in a mixing bowl.
  • Make a well and then pour in the milk, eggs, salt, pepper, and melted butter.
  • Mix to obtain a smooth batter, a little thicker than pancake batter, without lumps.
  • Add the chopped parsley and mix again.
  • Heat the waffle maker.
  • Pour a ladle of the mixture onto the plates.
  • Close the appliance.
  • Flip the waffle maker after 2 to 3 minutes to brown the other side.
  • Enjoy the waffles while hot.
